Oscietra caviar comes from the Acipenser Gueldenstaedtii sturgeon. These fish weigh between 15 and 25 kilos when the caviar is extracted, and no less than 10% of the female's body weight is caviar. The Oscietra Selection caviar is salted 3,7% and maturated for 12 weeks, and during that fase it develops a significant unique acidity to the flavor.
