The Oscietra Caviar is loved and often referred to as the "Queen of Caviar"

This wonderful caviar exhibits all the desirable qualities of its wild counterpart. Its firm pearl is small in size and the grains are dark coloured with a warm brown to dark grey. Rossini Oscietra Caviar has a nutty and slightly fruity taste with a subtle hint of salt and plenty of depth and richness.

The subtle nutty fruitiness combined with the creamy acidity gives this caviar an intense, deep and long lasting aftertaste that lingers on the palate.

The Oscietra Caviar unfolds its layers of complexity, revealing a delicate and unique acidity to the flavor.

The Acipenser Gueldenstaedtii sturgeon is mature between 9 and 12 years of age. These fish weigh between 15 and 25 kilos when the caviar is processed, and no less than 10% of the females body weight is caviar. These sturgeons are farm raised in natural ponds fed by pure ground waters on a diet of natural hormone free food. The Oscietra Selection caviar is salted 3,7% and maturated for 12 weeks, and during that fase it develops a significant unique acidity to the flavor.
