Our Gold Selection caviar originates from the sturgeon Dauricus Schrenkii. The caviar is extracted when the sturgeon reaches its second maturation at 12 years old, weighing between 65-105 kilograms. Extracting the caviar at second maturation enhances its flavor and characteristics to create a truly exquisite caviar that is superior in taste. The caviar matures for up to 12 weeks resulting in a firm grain with a satisfyingly crisp texture, and a slightly nutty taste that is both bold and refined. Out of every 100 sturgeons, only a mere 20 will yield caviar with a color classified as the sought-after 'Gold'.
